The "orecchiette pugliesi", typical dish using hand-made pasta dressed with either "cime di rapa" (a type of bitter leafy green), garlic, oil and peppers or ricotta and tomatoes.

Martina Franca and Valle d'Itria. A most elegant town 15 km. from Alberobello. The old section of town has enticing narrow medieval streets lined with numerous Baroque and Rococò palazzetti. The Valle d'Itria extends from the north of Martina Franca to Locorotondo, like one green lawn laced with vineyards, olive groves and dotted with trulli.

Castellana Caves. South of Monopoli, these caves make up the largest speleological site in Italy. There are 3 km of tunnels, up to 70 meters deep, immense grottoes and caverns with dramatically lit stalagmites and stalactites.
