The cuisine is simple, but tasty and very well done. Specialties: la salatina calda al ginepro (warm salad with juniper), la minestra di farro (barley soup), fiorentina (T-bone steak), la pancetta fresca di maiale e la tagliata di manzo (fresh bacon and shaved beef). Al Tranvai P.za Torquato Tasso 14/r tel. 055-225197 In the popular San Frediano sector with its artisans workshops this miniscule but cozy osteria offers Florentine specialties such as: la ribollita (Farmer'swife black cabbage stew), la panzanella, la pappa col pomodoro (bread stew with tomato), le frattaglie (sausages with tripe and lamb) and la francesina (boiled beef puréed with onion). The house wine, a Montspertoli, is good for the price. Travelers' tip: A rare sight these days, are the pictoresque gold and green carts of the tripe-vendors. Palmiro Pinzauti, in the Piazza de' Cimatori, is one of the survivors, who's always good for an unforgettable panino di lampredotto!
