RECIPES
The Classic:
Seasonal vegetables, cooked whole fresh from the garden to preserve
the taste.
Add pasta or rice shortly before serving.
Vegetable
Passato:
Garden vegetables cooked and pureed; served with crostini, croutons
or strips of toasted bread.
Legumes and Cereals:
These soups are a traditional meal which often substitutes pasta during
winter months. Favorite ingredients are barely, chickpeas (Garbanzo
beans), peas and beans.
Fish Soup:
Really very good, especially in coastal areas where fish is freshest.
Look for minestra di pesce, fava beans and chicory.
Tomato
special:
Tomatoes, cucumber and melon. Delightful in milder winter climates or
in summer.
Pumpkin Soup:
Any orange squash will do nicely, particularly the Italian Mantovano.
