Rice with Truffles
Difficulty: minimal
Preparation time: 30 minutes
Serves 4
Ingredients:
7 oz. rice
2 oz. butter
1 oz. grated Parmesan cheese
3 leaves sage
1 clove garlic
salt
Black truffle and White truffle
Preparation:
Cook the rice for 20 minutes in salted water to cover. To prepare the
dressing, melt the butter in a frying pan with the whole clove garlic
and sage leaves. When browned, remove the garlic and sage.
Truffle Frittata
Serves 6
Ingredients:
9 eggs
3.5 oz Truffle in slices or paste
3 T. extra virgin olive oil
salt and pepper
a splash of white wine
Preparation:
Beat the eggs in a glass mixing bowl, with the salt and pepper. Add
the truffle and blend well. Heat the olive oil in a skillet and pour
in the egg mixture. Gyrate the skillet continuously to prevent the egg
from sticking. When the first side has cooked, flip the frittata over,
sprinkle with wine and finish cooking. Serve hot.
