Who was the first Italian to receive three Michelin
stars? Who was listed by time magazine as one of the 15 top chefs in the
world?
Just past his 70th birthday, master chef Gualtiero Marchesi is the
leading representative of Italian cuisine in the world.
His culinary philosophy is create and innovate, with serving with the
refined touch of days-gone-by, an overall tone of understated elegance.
The exquisite dishes served in his restaurants are a balance of preparation,
simplicity and the search for excellence. His recipes, celebrated throughout
the world, apply the techniques of fine cuisine to the preparation of
dishes using regionally typical ingredients. The results are miniature
works of art, harmonious in all their elements, where the ingredients
are not suffocated, but rather rendered divine in the preparation.

The restaurants
The Ristorante di Erbusco in Franciacorta (BS) is a synthesis
of all the master chef's skill and years of experience. This happy spot
immersed in greenery is the home of two gastronomic cultures coexisting
in perfect harmony, one complementing the other. Some dishes arrive at
the tables as are carefully constructed works of art, while others receive
the master's touch upon arrival in the dining room for all to see. Such
is the "global cuisine" as envisioned by Gualtiero Marchesi, realized
within an ambiance that recalls the tradition of fine dining. Attuned
to the natural rhythms of the peaceful Franciacorta countryside, the chef
keeps step with the availability of seasonal ingredients in a way lost
to the large cities.
Gualtiero Marchesi di San Pietro all'Orto, is more than
a restaurant! It's a right and proper gastronomic laboratory which gives
a new meaning to the term "Renaissance workshop". Marchesi, modern-day
master craftsman, shares the depth of his personal experience, uniting
tradition with technological advances. Opened in 1998, San Pietro all'Orto
is fitted with a series of video cameras by means of which guests can
observe the creative activity live from the Ebrusco kitchens. Seat of
the Club Marchesi, the "workshop" is also an accredited Cooking Academy
which organizes courses and tastings. In San Pietro's shop, guests can
purchase food products and decorator items for the table, all hand-picked
by the chef himself!
