| Travellers considering their first trip to Italy are prone to indulge their
gastronomic fantasies well in advance, going into raptures at the thought of real
spaghetti and meatballs, real lasagna and, inevitably, real Italian pizza. If you sense a
"but" coming, you're right on the mark... Americans who have grown up eating in restaurants established by Sicilian or Neapolitan immigrant families are in for a considerable shock when they hit Piedmont or Tuscany. Likewise the urbane patrons of up-market, northern Italian cuisine restaurants popular on either coast may feel cheated out of their due in Sorrento. In either case, the Italian food served in the US has been adapted to suit the availability of ingredients and local preferences. Therefore, some of your favorites may not be on the menu in Italy, and some of items which are listed may not be as you'd expect them be! To spare the uninitiated unnecessary disappointments, we've put together a few words of warning, by way of explanation...
