Beef Tartar
Preparation: 15 minutes
Ingredients:
(serves 1)
4.5 oz. fine ground prime beef
lemon
1 T. capers
3 anchovy filets in oil, ground
1 T. onion
parsely
1/2 hard-boiled egg, chopped
1 fresh egg yolk
To Prepare:
Form the ground beef into a ball and place in the center of a wide,
shallow, topped with the raw egg yolk. Surround the ground beef with
5 slices of lemon and cover with the capers, onion, egg, parsely and
anchovy paste. Mix all these ingrediants well just before serving (fingers
work best!).
