Of all the plants cultivated by man, garlic is one of
the most ancient. It is also one of the most widely diffused.
Prized the world over for its aroma and flavor, garlic is found
raw and cooked from Asia to southern Europe and is considered
indispensable for the majority of Italian dishes.
Spaghetti di mezzanotte (Midnight Spaghetti)
Serves 6
16 oz. spaghetti (cooked)
1/4 C. extra virgin olive oil
5 cloves of garlic
salt and ground dried red pepper to taste.
Preparation:
Mince the garlic and place with the oil in a large frying pan.
Add precooked spaghetti and stir over high heat until the ingredients
are well-blended. Place in a serving dish and add a dash of
pepper and drizzle olive oil over the top. Serve immediately.
