Arugula lettuce and pear salad
with Parmigiano and balsamico

A really, really easy recipe: clean a bunch of arugula, peel and thinly slice a ripe but firm Williams, Anjou or Passe-Crassane pear, and flake 2-3 oz. of Parmigiano cheese. Place all the ingredients in a bowl and season with salt and aceto balsamico, adding the oil at the last possible moment.
