Pavarotti allegedly cooks this himself... In a frying pan, brown 3 oz. butter, then brown on both sides 8 slices of veal pounded with a mallet and dusted with flour. Set the veal slices on a platter in a warm oven; place a bit more butter and a few slices of uncooked Parma ham in the frying pan. Brown lightly and splash with a bit of balsamico to taste just before turning off the burner. Pour the contents of the frying pan over the sliced veal and serve immediately. |
